Graham Wedding at Tybee Island

Here are a few cakes from this weekend... Thank you SO MUCH to Paul Kennedy catering for having a cart to get this cake up to the third floor. That hallway wasn't even big enough for one person, geesh!

Well, we successfully got the cake there thank God. Had to do a few touch ups, but I think it looked great when it was finally set-up and ready to be devoured.

The Cake Project of the Year I think-THE MILLENIUM FALCON for Marie Adams..

Here's the front...

Here is the detail on the back.....

For some reason I didn't take very good pics of the sides (which took me an entire DAY to do alone)

Marie was a joy to work with. She went to a great deal of trouble to have this cake made and actually requested a release from Lucas Films (with success-THANK YOU LUCAS FILMS) in order for me to be able to make it (you can't just make licensed replicas... yeah, it sucks, but she was able to get the release after all). Here's the cake that took us approximately 4 days from start to finish.

I was happy with the result!!! It was dark chocolate fudge cake with white chocolate buttercream filling. The BEST combo I might add... I will be looking forward to hearing about how the cake was received by the bride and groom! ;-)

Wedding Season is ON!

Here is a wedding cake we made this weekend. I was thrilled how it turned out!

Margrave Wedding at The Jepson Center for the Arts

This is such a lovely place to have a wedding. The set-up is very modern and clean since it's a museum. Check it out if you're planning a wedding. Pretty cool place!

And here's the cake.....

Parks Wedding at The Savannah Golf Club

Here is a cake we made for Suzanne Parks. The reception was at The Savannah Golf Club. One of the flavors was my personal favorite..... Dark Chocolate Fudge with White Chocolate Mousse! YUMM! So delicious....

The Barber Wedding

Catherine was a pleasure to work with. She was really scared of fondant, but I assured her that I fondant I use is different from what most cake designers use and actually doesn't taste that bad (it actually tastes like white chocolate since it's made with wc). I don't think she quite believed me ;-), but I got some feedback from her telling me how the fondant actually tasted pretty good on the groom's cake afterall... Here are a few pics of the wedding and groom's cakes. The reception was at The First City Club on Bull Street here in downtown Savannah.

I'm glad you enjoyed the cakes... More to come next weekend! Bye

Rondfeldt Wedding at The Mansion

Here is a picture of a wedding cake we did this weekend at The Mansion on Forsyth Park. Julia was really great to work with and had so many excellent ideas. I think the cake turned out fabulous and the sugar flowers really complemented the custom topper.

Cora's Birthday Cake

Here is a Dooney and Bourke Purse cake I made for my old boss (no, you're not an elder, lol) over at Zee Medical. I hope she likes it! Tell Me... Tell Me!

Nick and Andrea McGaha...

It was such a pleasure working with you! I hope that the wedding cake and cupcakes really made your day.

Nick and Andrea traveled all the way from Kentucky to have a destination wedding here in Savannah where Andrea attended SCAD for Graphic Design.

The decided to have 120 cupcakes decorated with sugar flowers "of course" (made out of modeling cholcolate-totally delicious..) and polka dots, plus a smaller wedding cake pictured here. Everything turned out great except the weather and tornado warnings... yuck! Well, I'm sure the wedding still went on ;-) and I can't wait to see the cake cutting pictures, yay!

Here are some of the gorgeous cucakes in all different flavors, vanilla butter, chocolate fudge, marble and red velvet topped with a variety of frostings such as the oh so wonderful swiss meringue buttercream and the cream cheese... Yummm...

Here is a picture of one of the wedding cakes we made on the 21st. The wedding reception was held at the Marshall House and I wasn't able to see the bride and groom, but can't wait for some pictures of the cake cutting. Thank you Christine and Robert for allowing Cake By Design to design and make your wedding cake. We all hope you had a wonderful time at your wedding.

Vegan Coconut Wedding Cake

I had the pleasure this weekend meeting with Jenn and her family about her upcoming April 12th wedding. She's a vegan and I experimented with making vegan coconut cupcakes. The recipe turned out GREAT and both she and I were very pleased with the result (very moist and you couldn't tell they were vegan at all). Many people are becoming vegan nowadays and I am planning on going to specialty baking school in the fall to learn more techniques.

Vegan Coconut Cake Recipe:

Swan's Cake Flour (sifted)
Organic Cane Sugar
Raw Agave Nectar
Baking Powder
Pure Vanilla Extract
Coconut Extract
Coconut Milk/Almond Milk
Egg Replacer
Veganaise

Vegan Coconut Buttercream Frosting:

Earth Balance
Organic Powdered Sugar (sifted)
Coconut Shavings

(I recommend using some non-hydrogenated shortening coupled with the earth balance for stabalization if the cake is going to be tiered, etc)

GLUTEN:

Many people are finding out that they are allergic to gluten (which is found in alomost EVERYTHING) I also tried using Quinoa four (gluten-free) to make some pancakes on Sunday for the family, but honestly, the quinoa flour has a very high protein content and an almost nutty flavor, so John and I weren't too keen on the pancakes personally. I'm going to try a mixture of tapioca, rice flour and millet, which are also gluten free.

Beecher Wedding Cake January 3rd 2009

First Wedding Cake for the new year.... It was a classic and delicious design (if I might say so myself). The bottom tier was Chocolate Fudge w/Chocolate Frosting. The top tier was Classic Red Velvet. The strawberries are topped with Chocolate Ganache and White Chocolate Ganache.... YUMMMMMMMEEEEEEEEEEEEEEEEEE!!!!!!!!!!!!!!!!!!!!!!!!!!!!! I "STILL" love strawberries and chocolate.

3D WWII Plane Cake for the Groom...

This was a fun cake we made for a bride's fiance and it was a complete "super suprise." I heard from the caterer that he really loved it!!

I really like making people happy!!! And yes... It REALLY is a CAKE!!!!

A Purse Cake for Mandy-Juicy Couture that is.....

A Birthday cake! We are confidant that it tastes better than leather. ;-)
